For Christmas dinner I´ll have nut roast bought from a guy in town. However, here are three cookbooks that I occasionally read or use, and that you might would like to find under your christmas tree:

The kind diet by Alicia Silverstone  – she explains how you can go vegan or superhero, has a great introduction, tips about meat, dairy, white sugar and processed foods. You can join an online community.

Simple recipes for joy by Sharon Gannon – wonderful pictures, FAQ’s, cooking tips and kitchen essentials.

Vegan With A Vengeance by Isa Chandra Moskowitz – great about how to veganize things, like a 1/2 banana equals 1 egg.
Recommendations when it comes to vitamins, minerals and nutrients from the Vegan Society.

A few recipes:

Overnight oats

1/4-1 cup oatmeal
Goji berries
Chia seeds
Linseeds
2 walnuts

Cover with cold water, place on counter overnight.

Kitcheri (recipe from Gannon)

1 cup brown rice
2 cups red lentils

Rinse with cold water, then add

8 cups water

Boil 5 minutes, then simmer fro about 45-60 minutes. Stir occasionally.

Serves 8-10 

I eat this dish occasionally after yoga.

Soup of peas

400 grams frozen peas
1-2 cloves of garlic
1 cube vegetable broth

Everything in a casserole, cover with water. Cook for about 3-4 minutes. Get it into a blender and blend until it is smooth. Taste accordingly with salt and pepper.

A few tips:
  • Overnight bulgur – 1 cup bulgur and 1 cup water, place on your counter for a few hours or overnight.

 

  • Chilled tea – use cold water and teabags according to the size of your teapot. Place on your counter for 1 hour. How to make Turmeric and Matcha tea.

 

  • You don’t need oil or butter when you have vegetables in a titanium pan.

 

  • Use wooden utensils.
